Raw beetroot and carrot salad
A lovely festive looking raw beetroot and carrot salad. It can be done in a food processor but using a coarse cheese grater makes it extra crunchy.

- 1 beetroot peeled
- 1 carrot
- 1 apple
- Juice of 1 lemon
- 2-3 tbsp extra virgin olive oil
- salt & pepper to taste
- A handful of fresh herbs - mint, basil, coriander, parsley, oregano, water cress etc.
- A handful of nuts – almonds cashew nuts, pumpkin seeds, pine nuts etc. toasted
Peel beetroot, carrot and apple. Grate them using a coarse grater. Place in a large bowl.
Add lemon juice, olive oil and salt & pepper and toss thoroughly.
Toast nuts. Tear herb leaves.
Mix herb and nuts with the salad just before serving.
