Raw beetroot and carrot salad

Grated beetroot, almonds and mint salad
A lovely festive looking raw beetroot and carrot salad. It can be done in a food processor but using a coarse cheese grater makes it extra crunchy.

  • 1 beetroot peeled
  • 1 carrot
  • 1 apple
  • Juice of 1 lemon
  • 2-3 tbsp extra virgin olive oil
  • salt & pepper to taste
  • A handful of fresh herbs - mint, basil, coriander, parsley, oregano, water cress etc.
  • A handful of nuts – almonds cashew nuts, pumpkin seeds, pine nuts etc. toasted


  • Peel beetroot, carrot and apple. Grate them using a coarse grater. Place in a large bowl.
  • Add lemon juice, olive oil and salt & pepper and toss thoroughly.
  • Toast nuts. Tear herb leaves.
  • Mix herb and nuts with the salad just before serving.

    Really delisous, also made with orange juice instead of lemon.
