Use a large salad bowl and add the sour cream, pine nuts, dill and garlic.
Season with salt and pepper and mix everything together.
Slice the cucumber through the middle and scoop the seeds out to make room for the filling.
Overfill the cucumber halves with sour cream mix and run a butter knife blade along the edges of the cucumber to spread it smoothly. Put the excess filling back in the bowl
Slice filled cucumber into 1 inch (2.5 cm) thick slices.
Serve cold!

Top them with little flags and you have yourself a fleet of cucumber boats. Perfect for a kids party.
