Cucumber and sour cream bites
These fun cucumber and sour cream bites are great served as appetisers or in your lunchbox.
Ingredients
- 1 bunch Superb Herb Dill
- ½ cup Tatua Sour Cream
- 1 garlic clove chopped
- salt
- pepper
- 1 telegraph cucumber
- 1 tbsp lemon juice
Instructions
- Chop the dill.
- Use a large salad bowl and add the sour cream, pine nuts, dill and garlic.
- Season with salt and pepper and mix everything together.
- Slice the cucumber through the middle and scoop the seeds out to make room for the filling.
- Overfill the cucumber halves with sour cream mix and run a butter knife blade along the edges of the cucumber to spread it smoothly. Put the excess filling back in the bowl
- Slice filled cucumber into 1 inch (2.5 cm) thick slices.
- Serve cold!
Notes
Top them with little flags and you have yourself a fleet of cucumber boats. Perfect for a kids party.
