  • Preheat your oven to 180°C.
  • Lay out the crackers on a baking sheet lined with parchment paper.
  • Using a spoon or a brush, evenly spread a thin layer of pesto sauce onto each cracker. Top with shaved parmesan.
  • Bake for about 8 minutes or until the edges of the crackers are slightly golden, and the cheese has melted. Remove from the oven.
  • Add the fresh rocket leaves and finish with a drizzle of olive oil and a sprinkle of cracked pepper.
  • Serve warm.
