Pesto, rocket and parmesan pizza crackers

Ingredients
- ½ box Huntley & Palmers Roasted Sprouted Oat Cracker Bread
- 1 cup pesto store-bought or homemade
- ¾ cup fresh rocket washed and dried
- ½ cup shaved Parmesan cheese
- 1 tbsp olive oil
Instructions
- Preheat your oven to 180°C.
- Lay out the crackers on a baking sheet lined with parchment paper.
- Using a spoon or a brush, evenly spread a thin layer of pesto sauce onto each cracker. Top with shaved parmesan.
- Bake for about 8 minutes or until the edges of the crackers are slightly golden, and the cheese has melted. Remove from the oven.
- Add the fresh rocket leaves and finish with a drizzle of olive oil and a sprinkle of cracked pepper.
- Serve warm.
