Tzatziki
Make Tzatziki from scratch. This freshly made Greek style dip is perfect as a condiment too.

- 1 cucumber grated
- 1 cup plain Greek yoghurt
- 2 tbsp extra-virgin olive oil
- 2 tbsp chopped fresh herbs mint, dill
- 1 tbsp lemon juice
- 1 clove garlic minced
- sea salt
Lay a piece of Handee paper towel on a dry clean surface. Grate cucumber on the paper towel. Place another towel over the graded cucumber and lightly squeeze to remove excess moisture. Transfer the squeezed cucumber to a bowl, repeat with the remaining cucumber for a few times.
Add yoghurt, olive oil, herbs, lemon juice, garlic, then season with salt. Mix well and leave for 5 minutes to allow the flavours to meld.
Serve tzatziki immediately or chill. It keeps well in the refrigerator for 3 days.
