Prawn tacos with mango and coriander salsa

United Fish Co salt & pepper battered prawns

handmade tortillas
or store-bought

cup
shredded cabbage
lightly salted
1
mango
diced
½
red onion
finely chopped
1
jalapeño
seeded and minced

Superb Herb coriander
finely chopped

limes
juiced
salt
to taste
pepper
to taste
Instructions
Cook the prawns according to package instructions.
In a bowl, mix together diced mango, red onion, jalapeño, cilantro, lime juice, salt and pepper to make the mango salsa.
Warm the corn tortillas in a dry pan or microwave.
To assemble, place some shredded cabbage and prawns on each tortilla shell. Top with a spoonful of mango salsa.
Serve freshly made.
