Chickpea flour tortilla
Chickpea flour is ideal for making savoury flatbreads and fritters. These tortillas are easy to prepare, naturally gluten free and have a subtle nut flavour.
Ingredients
- 1 cup FreshLife chickpea flour
- 1 cup water
- 1 tbsp olive oil
- ½ tsp salt
- Cooking spray or extra oil for greasing the pan
Instructions
- In a bowl, combine chickpea flour, water, olive oil and salt and whisk until you get a smooth batter. Set aside to rest for approximately 30 minutes or until thickened.
- Heat a frying pan over medium heat.
- Lightly oil the pan, pour about 1/4 cup of the batter onto the frying pan and swirl it around until thinly spread.
- Cook for 2-3 minutes on one side until the edges start to lift. Flip and cook for an additional 1-2 minutes on the other side.
- Repeat the process until all the batter is used.
- Top with your favourite taco fillings and enjoy fresh.
