Prawn tacos with mango and coriander salsa

It's fiesta time and there is no better way to celebrate than with delicious seafood tacos!

  • Cook the prawns according to package instructions.
  • In a bowl, mix together diced mango, red onion, jalapeño, cilantro, lime juice, salt and pepper to make the mango salsa.
  • Warm the corn tortillas in a dry pan or microwave.
  • To assemble, place some shredded cabbage and prawns on each tortilla shell. Top with a spoonful of mango salsa.
  • Serve freshly made.
