Haumako Hills Venison Steaks with a herb crust served over seasonal vegetables
Here’s a delicious recipe you can make using Haumako Hills Venison steaks, that you then cover with a delectable herb crust and serve over seasonal veges.
Ingredients
Lamb
1 pack Silver Fern Farms Haumako Hills Venison Steaks
2 Tbsp oil
1 Tbsp mustard
Salt and pepper to season
Herb Crust
1 Tbsp each of fresh herbs; parsley, tarragon, marjoram, thyme
1 clove garlic, crushed
½ cup breadcrumbs
1 egg
Method
Place the fresh herbs, garlic and breadcrumbs in a food processor. Pulse to combine. Add egg and process further. A little water can be added if it is too dry.
Sear your venison in a hot pan until browned on all sides. Dab with a paper towel to remove any oil residue.
Preheat an oven to 220°C. Spread a little mustard over each steak and pack the herb crust on top. Cook the steaks in the oven for 10 minutes (medium-rare)
Remove from the oven, cover with tinfoil and rest your venison for 5 minutes. Slice across the grain and serve with a selection of sautéed seasonal vegetable.
