Apple pudding with butterscotch sauce
Bring back classic homemade puddings as part of your family meal with this easy apple pudding recipe.
Ingredients
- 2 apples thinly sliced
- 1 ½ tbsp sugar
- 20 g butter melted
- 125 g butter softened
- 1 cup brown sugar
- 2 eggs
- 1 cup self raising flour sifted
- ½ cup ground almonds optional
- ¼ cup milk
Butterscotch Sauce
- 50 g butter
- 1 cup brown sugar
- 1 ½ cups cream
Instructions
- To make the butterscotch sauce, place the cream, butter and sugar in a small saucepan over medium heat and stir until the sugar is dissolved. Bring to the boil and cook for 5 minutes or until thickened. Set aside.
- Place the apples, sugar and melted butter in a bowl and toss to coat. Line a 6 cup capacity oven dish with the apples.
- With an electric beater, beat the butter and brown sugar together until light and creamy. Gradually add the eggs, beating well after each addition. Fold in flour and almonds and stir in the milk.
- Spoon the mixture into the dish and bake at 180°C for 40-45 minutes until cooked when tested with a skewer. Turn onto a serving plate and serve with butterscotch sauce.
