Caramel cookies
This gorgeous cookie recipe is divine in all respects. Simple with just 5 ingredients and the biscuits are that perfect mix of crunchy and chewy at the same time. So easy that the kids will love to help and so delish that you will be asked to make these over and over.
Ingredients
- 60 g butter
- ⅓ cup golden or maple syrup
- ⅓ cup brown sugar
- 1 ½ cups self raising flour
- 8 Jersey Caramel lollies chopped in half
Instructions
- Whack your oven on to 180°C. (160°C fan bake).
- Put the butter, syrup and sugar in a saucepan and over a low heat melt until dissolved. Set aside to cool down.
- Meanwhile line a baking tray with baking paper.
- Then in a separate bowl, sift in the flour.
- When cooled, add the buttery/sugar mixture to the flour and mix into a smooth dough.
- Spoon 16 equal amounts onto the tray (roll each one into a wee ball with wet hands).
- Push a halved jersey caramel lolly onto the top of each ball to slightly squish it.
- Place the tray in the oven for 10 minutes until the lolly melts but not so much that the white line through the middle of the lolly disappears. After taking the tray out of the oven, leave the cookies to sit on the bench on the tray. Trying to move biscuits while they are still piping hot will make them crumble.
- When cooled, put onto a wire rack and watch them disappear.
