Cute Cupcakes
Domestic goddess skills must include knowing how to make cute cupcakes for the tribe. Check out this colourful cupcake recipe. Cupcakes are soooo hot right now!
Serves 12
To make Cute Cupcakes, you will need:
½ cup Rice Bran Oil
1 cup sugar
1 ½ cups self-raising flour
2 eggs
1 Go-Gurt or Smacker yoghurt tube (choose a favourite fruity flavour)
1 teaspoon Hansells vanilla essence
Finely grated rind of 1 orange
Half teaspoon salt
You need:
12 pan muffin tin
Paper cupcake holders
How to:
Preheat oven to 180 C (170 C if using fan bake).
Measure oil, sugar, eggs and rind into a food processor and blend until pale and creamy. A hand water or good old-fashioned wooden spoon in a bowl works just as well!
Add the yoghurt and vanilla and whiz again.
Sift in the self-raising flour and salt.
Mix just enough to make a fairly smooth and light batter.
Place into paper patty-pan lined muffin tins and bake for 14 minutes.
When cool, ice and decorate with your favourite icing and sprinkles.
Get creative and add lollies, treats, fruit and nuts. Think colour!
In fact, in regard to icing the cupcakes, make the traditional icing (the recipe is below) and have 2 or 3 different food colouring options like red, blue and yellow. You can then mix those 3 basics to make other colours like purple, green, orange etc.
And just go forth and sprinkle with lots of options! Supermarkets now stock lots of sprinkles and smarties and wee lollies are great too. Just think lots of colour and experiment! Cocoa of course makes a fab chocolate icing and little M&Ms are perfect decorations.
