Kale with Caramelised Onions
I love kale and it grows so well in my home vege patch, most of the year. You can just throw kale in with your vege stir fries but I am a huge fan of a good creamy spinach dish so decided a cheese sauce, some caramelised onions and some fresh kale was going to be the vege dish of the day.
Ingredients
4 large handfuls of kale, washed, de-stemmed and leaves ripped.
1 Tbsp butter
1 Tbsp plain flour
1 cup milk
1 Tbsp Parmesan Cheese
Half cup Tasty or Mozzarella Cheese
Sprinkle of Nutmeg
Freshly ground salt and pepper
For the caramelised onions:
2 3 onions, sliced
2 Tbsp Butter
2 Tbsp brown sugar
salt and pepper to taste
Method
- Bring salted water to the boil and add your torn kale to the water. Simmer steam about 10 minutes
- Meanwhile, melt butter in a small saucepan. Add the flour and cook for 2-3 minutes. Add the milk gradually, and bring to the boil, string constantly. Remove from heat and add cheeses, nutmeg and salt and pepper and whisk to thicken. Set aside.
- Melt butter in a pan for the caramelised onions. Add onions and sizzle, add brown sugar salt and pepper. Cook until golden brown and caramelised.
- Add the kale and cheese sauce to the onion fry pan and just combine. Serve with a sprinkle of fresh herbs or micro greens.
