Weekends. Why don’t we take a little more care to the most important meal of the day -breakfast? It’s not hard to whip up some delicious, luxurious and good-for-you breakfasts from your pantry. Imagine the aroma of freshly baked muffins — even your teenagers will be up for them quickly.
Ingredients ( makes 12 )
2 cups plain flour
1 cup Hubbards Hot or Cold Blueberry & Cranberry
3 teaspoons baking powder
1 teaspoon baking soda
1 cup brown sugar
1 teaspoon cinnamon
3 eggs
¼ cup rice bran oil
1 ¼ cups EasiYo Mixed Berries & Bits yogurt
How to make Mega Breakfast Berry Yogurt Muffins
Pre-heat the oven to 185 degs and line a classic muffin tin with papers.
In a large bowl combine the flour, cereal, baking powder, soda, sugar and cinnamon and mix well.
In another bowl whisk together the eggs, oil and yogurt.
Pour the wet ingredients into the dry and stir gently to combine.
Spoon into prepared muffin papers and bake for 15-20 minutes.
Serve with extra yogurt and fresh or dried berries
