Prawn Soba Noodle Nourish Bowl

These prawn soba noodle nourish bowls are not only delicious but super quick and simple to make. Soba noodles are easy to find in the supermarket.

Ingredients
 
 

  • 2 tbsp + 1 tbsp sesame oil we love Lee Kum Kee
  • ½ onion diced
  • 2 tsp garlic minced (we love Lee Kum Kee)
  • 2 tsp ginger minced (we love Lee Kum Kee)
  • 250 g prawns we love Sea Cuisine
  • 300 g soba noodles cooked
  • ¼ bag spinach leaves we love The Fresh Grower
  • 200 g green beans topped and tailed & cut in half
  • 1 cup shelled edamame beans
  • 3 tbsp soy sauce we love Lee Kum Kee
  • 1 tbsp rewarewa honey we love Airborne Honey
  • 2 tbsp rice wine vinegar
  • 2 tbsp sesame seeds toasted (we love Alison’s Pantry)

Instructions
 

  • Heat 2 tbsp of sesame oil in a frying pan. Cook the onions, ginger and garlic and fry for 3 minutes.
  • Add green beans, prawns, edamame beans and spinach leaves cook for 2-3 minutes, until the greens have wilted down. Add noodles.
  • Add the soy sauce, honey, 1 tbsp sesame oil and rice wine vinegar.
  • Serve into bowls and top with toasted sesame seeds.
