Roast Chicken Maryland

Love roast chicken? Impress the family with this fabulous chicken dish with chorizo and crispy baby potatoes. Chicken Maryland is a cut of chicken with the thigh and drumstick together. Hearty, homely goodness.

  • Heat oven to 220°C/200°C fan forced. Place onion and garlic in the bottom of a large roasting tray. Add chorizo, and then top with chicken, potato, and rosemary. Drizzle with olive oil; bake for 45 minutes or until golden.
  • Make your own gravy or according to the gravy packet instructions.
  • Serve with the roast chicken, chorizo and crispy roasted potatoes.

Notes

*Chicken Maryland is a cut of chicken with the thigh and drumstick, you can substitute for chicken breast if you prefer, but don’t forget these will cook quicker so add to the roasting tray after the first 15 minutes to cook for the last 30 minutes only.
