It can be tough showing your love for someone in the kitchen if it’s not your happy place. Fear not – Fresh is here! These delicious dinners can be whipped up in a flash tonight – and they are ridiculously easy to make. What’s not to love?
Thai Red Prawn Curry
Ready in 20 minutes. Serves 2. Ingredients
2 tsp oil (we used Olivado Sesame Oil)
2 tsp red curry paste
1 cup coconut milk
1 tbs fish sauce
2 tbs brown sugar
1/2 cup chicken stock
1/2 teas cornflour or arrowroot
1 red capsicum, thinly sliced
2 cups sugar snap peas, ends trimmed
8 oz extra large prawns, peeled, cleaned, and tails removed
1/4 cup loosely packed fresh Thai basil
2 tsp lime juice
Method
Heat oil over medium-high heat in a non-stick frying pan until shimmering. Add the curry paste and saute until fragrant, about 30 seconds. Add coconut milk, fish sauce, and brown sugar. Mix to combine.
Whisk the chicken stock and cornflour together in a small bowl and whisk into the pan.
Add the capsicum and peas and cook until tender, 5 to 8 minutes. Taste, and add more curry paste at this time if needed.
Stir in shrimp and cook 3-5 minutes until fully cooked, turning once. Remove from heat and add basil and lime juice.
Serve over rice.
Garlic Mushroom Pasta
Ready in 20 minutes. Serves 2.
Ingredients
400g pasta (we used penne, but spaghetti or linguini work well too)
2 tablespoons premium olive or avocado oil
15g butter
1 shallot or small white onion, finely chopped
2 small cloves garlic, crushed
200g white button or chestnut mushrooms (or both), thinly sliced
20g cream cheese
1/2 cup cream or creme fraiche
Zest and juice of 1/2 lemon
Shaved parmesan, to serve
Method
Cook pasta in boiling salted water with a dash of oil, according to packet instructions.
Heat oil and butter in a pan until shimmering. Gently saute onionon medium heat until golden. Add crushed garlic and stir to combine.
Add mushrooms and continue to cook on medium until mushrooms wilt and get a golden colour. Once cooked through, add cream cheese and cream/creme fraiche, and allow to melt.
Remove from heat, add lemon and stir through.
Drain pasta, return to pan and pour mushroom sauce over the top. Stir gently to combine, then serve, topped with shaved parmesan.
