Walnut and date cake
This is a very simple and quick cake recipe you can whizz up in no time for unexpected guests. Healthy too with walnuts and dates
Ingredients
- 200 g dates
- 100 g walnut chunks
- 125 g self raising flour
- 100 g butter
- 3 eggs
- 125 g sugar
Instructions
- Remove the stones from the dates and cut into smaller pieces. Blend the dates and walnuts with the flour. In another bowl, mix the sugar with the softened butter. Separate the eggs and add the egg yolks to the sugar/butter mixture until it's soft and creamy. Add the flour/fruit mixture. Whisk the egg whites until stiff, then slowly add one half to the mixture, mixing with a wooden spoon, and then add the other half.
- Bake at 150°C for 30 minutes.
Notes
Next day, try it toasted in a hot sandwich-press then spread with almond butter. Delish!
