Vegetarian Mexican Burger

This plant-based burger is a vegetarians’ summer delight! It is built with a variety of delicious and Mexican style components made from usual pantry items.

Ingredients
 
 

Guacamole

  • 1 avocado mashed
  • ½ tomatoes diced
  • 2 tbsp chopped red onion
  • 1 tbsp chopped fresh coriander
  • Salt & pepper
  • Juice of 1 lime

Chipotle mayo

  • 3 tbsp mayonnaise
  • 1 tsp chipotle sauce

Burger components

  • 1 cup green cabbage finely chopped
  • 1 tomato sliced
  • sliced jalapenos (optional)
  • A handful of corn chips
  • coriander

Instructions
 

  • Cook the plant-based burger in the oven according to the packet instructions.
  • Guacamole: Combine all the ingredients of guacamole in a bowl.
  • Chipotle mayo: Mix mayonnaise and chipotle sauce. Adjust the amount of chipotle sauce according to your taste.
  • Toast inside the burger buns.
  • On the bottom half of the bun, spread the chipotle mayo, top with cabbage, tomato, plant-based burger, guacamole, jalapenos, corn chips and coriander. Top with the top bun.
