Scalloped potatoes

There's nothing better than scalloped potatoes to add creamy goodness and a saucy side dish to a main meal.

Ingredients
 
 

  • 1 can cream of chicken soup 420g
  • ½ cup milk
  • ½ cup sour cream
  • 1 clove garlic crushed
  • ½ tsp each of salt and pepper
  • 1.2 kg potatoes sliced unpeeled
  • 1 onion chopped
  • ½ cup grated cheese
  • ½ cup bread crumbs

Instructions
 

  • Mix cream of chicken soup, milk, sour cream, crushed garlic and salt and pepper in a small saucepan and heat to combine. Set aside.
  • Place and layer sliced, unpeeled potatoes and chopped onion in a lidded, oven-proof, greased baking dish. Pour creamy mixture over the top. Bake at 180 °C for 50 minutes, covered. Remove from oven. Sprinkle cheese and breadcrumbs over the top and return to oven for 20 minutes, uncovered. Cook until crisp and golden.
  • Serve warm with fresh or dried herbs as desired.
