Zucchini Chocolate Cake
Wow the crowds and make good use of your garden vegetables with this easy zucchini chocolate cake. Use courgettes, zucchini or marrow. Fall in love with this deliciously healthy cake recipe!
Serves 8
125 g butter
1 c brown sugar
½ c white sugar
3 eggs
2 ½ c flour (sifted)
Vanilla
½ c yoghurt
¼ – ½ cup of cocoa (sifted)
2 tsp baking soda (sifted)
1 t cinnamon
½ cup pistachios
½ t mixed spice
Pinch salt
3 cups grated zucchini or marrow
Chocolate to grate on the top or chocolate chips
Cream butter and sugar.
Add eggs one at a time.
Add everything else and mix – making sure you get right to the bottom of the bowl.
Sprinkle chocolate chips or grate chocolate on to the top – this way you don’t have to ice it.
Cook at 180 degrees for about 35 – 40 mins or when a skewer comes out clean.
If you use a cake tin with a whole in the middle it may only take abut 25mins.
Or alternatively, use chocolate icing as shown.
