Brazil Nut Chews
According to University of Otago researchers, just one brazil nut a day is enough to raise the average New Zealander's selenium intake to fight the flu and improve eye health.
These tasty morsels are delicious! They are sugar-free, dairy-free, egg-free and gluten-free and great for lunchboxes.
Ingredients
- 1½ cup chopped brazil nuts finely chopped
- 1¼ cup whole grain oats
- ½ cup dates chopped
- ½ cup coconut plus more for coating
- ¾ cup honey
- ¼ cup tahini
Instructions
- Pre-heat your oven to 180°C.
- Mix all the ingredients together and shape into balls. You will need to wet your hands regularly to prevent the mixture sticking to your hands. Roll in a little extra desiccated coconut before placing on a baking-paper lined tray. The chews will flatten very slightly during baking. Bake for 22-25 minutes.
- Note: These Brazil Nut Chews can burn quite easily and continue to set after they are removed from the oven. They might seem undercooked and soft but within half an hour they will become chewy. Do not leave them in for longer than 25 minutes.
Notes
Tips: Coat them in coconut as well as more crushed brazil nuts after rolling and just before baking if you want more of a golden nutty coconut crunch on the outside.
