Apricot and Brazil nut slice

This slice is quick, easy, delicious and not too sweet. We use organic apricots and digestive biscuits for the base just to make it healthier. The addition of brazil nuts gives a selenium boost that will fight the flu as well as look after your brain and eye health. Everyone will love this homemade slice.

Ingredients
 
 

  • 125 g butter
  • ½ cup soft brown sugar
  • ½ tin sweetened condensed milk
  • ½ cup chopped dried apricots organic if possible
  • ¼ cup chopped dried cranberries
  • ¼ cup chopped brazil nuts
  • 250 g digestive biscuits (or wine biscuits) crushed
  • ¼ cup desiccated coconut to decorate

Lemon Icing

  • 100 g butter
  • 1 ½ cups Icing Sugar
  • 1 lemon grated rind and juice
  • 1-2 tbsp hot water

Instructions
 

  • Heat 125g butter, brown sugar and condensed milk until the butter has melted. Do not boil.
  • Add chopped apricots, cranberries and crushed biscuits.
  • Mix well. Press into a greased 20 x 30cm sponge roll tin.
  • Make the lemon icing: Beat butter until pale and fluffy. Add icing sugar, grated rind and lemon juice and sufficient water so that you have a fluffy light mixture.
  • Spread the lemon Icing over the slice and sprinkle with coconut.
  • Set in your fridge for 30 minutes.
  • Cut into big squares.
