Berry Ambrosia
This variation on the traditional ambrosia dessert salad is delicious and always a crowd pleaser. It’s brilliant as a festive dessert and quick and easy if you need to take a plate in a hurry. You can use frozen berries if fresh ones aren’t in season.
Ingredients
- 1 punnet blueberries approx 125g
- 1 punnet strawberries approx 400g, quartered
- 500 g seedless grapes halved if large
- 1 cup desiccated coconut
- 100 g mini marshmallows or chop large ones
- 500 g sour cream
- Icing sugar for sweetening if needed
Instructions
- Rinse all fruit and combine in a bowl with the coconut, marshmallows and sour cream. Fold mixture to make sure it’s evenly combined.
- Taste and add icing sugar to sweeten if needed.
- Serve in dessert, martini or old fashioned champagne glasses.
