Red coleslaw with Asian-style vinaigrette

Something different for the barbecue table! An asian-style slaw with vinaigrette.

Ingredients
 
 

  • 1 cup red cabbage finely sliced
  • 2 spring onions finely sliced
  • 1 carrot grated
  • 1 Red Capsicum sliced
  • ½ cup Fresh coriander chopped
  • 1 tbsp Sesame oil
  • 2 tbsp vegetable oil
  • 1 tbsp Rice Wine Vinegar
  • 1 tsp fresh ginger grated
  • 1 clove garlic crushed

Instructions
 

  • Place cabbage, onions, carrot, capsicum and coriander in a serving dish.
  • To make dressing, combine oils, vinegar, ginger and garlic in a small bowl.
  • Drizzle dressing over the vegetables and toss gently.
