Haloumi and Asparagus Skewers
There is nothing like halloumi and asparagus grilled on a hot BBQ, and these skewers make the perfect addition to your next BBQ with friends and family. Drizzled with sweet but savoury apricot and mustard dressing, these are a real winnner!

  • To prepare the asparagus, remove the woody ends then cut stems into thirds. To prepare the haloumi, cut into 1-2cm thick slices.
  • Skewer 1–2 pieces each of mushroom, bacon wrapped asparagus and haloumi onto a soaked kebab stick or skewer, then repeat. Scatter chopped thyme and drizzle with olive oil. Season with salt and pepper.
  • Grill on a hot BBQ for 3-4 minutes each side, then place on a platter.
  • Drizzle with apricot & mustard dressing, then garnish with fresh herbs if desired and serve immediately.
