BBQ Chicken Parcels
This wonderful chicken recipe for the BBQ is a superb meal for one or make as many as you need! This chicken recipe makes little foil packets that you just throw on the BBQ hotplate - no dishes.
Ingredients
- 1 piece of chicken breast or leg
- salt
- freshly ground pepper
- dash of paprika to taste
- sprinkle of dry mustard or mixed herbs to taste
- 1 sliced medium tomato
- 1 sliced medium potato
- 1 sliced medium onion
- 2 whole mushrooms
- 2 slices of green capsicum
- 1 to 2 tbsp tomato juice
- knob of butter
Instructions
- Place chicken piece - skin side down in centre of foil sheet.
- Sprinkle with salt, pepper, paprika and mustard.
- Arrange vegetables on top of chicken, sprinkle with tomato juice and dot with butter.
- Fold foil over the chicken and vegetables and fold the open ends over and over toward the food pressing each 'seal' firmly.
- Place packets on medium to hot barbeque grill - cook for approx. 1 hour until tender, turning packets carefully every 15 mins.
Notes
Tips: Packets may also be cooked in a hot oven 200C - 230C for approx 1 hour or until tender. You can also try fish and lamb rather than chicken.
