Best BBQ Chicken

Serves: 2

Ingredients

1 whole free range chicken (butterflied)
½ cup Best Foods mayonnaise
1 tablespoon lemon zest
1 teaspoon Moroccan spice
1 tablespoon fresh chopped mint
2 cloves garlic, crushed
Spray oil
1 teaspoon Moroccan spice
1 tablespoon honey
1 teaspoon sea salt
1 lemon cut into 4 wedges

Method

  1. To prepare the chicken cut down the breast bone so you flatten out the chicken. Arrange the chicken on a large piece of tin foil, skin side up.
  2. In a small bowl combine the mayonnaise, zest, Moroccan spice, mint and garlic.
  3. Carefully prise the skin away from the chicken flesh and spoon the mayonnaise marinade up under the skin so it creates a layer between the flesh and skin -this will help the chicken stay moist and flavoursome.
  4. Spray the chicken with the oil and rub the spice, honey and salt all over theouter skin. Place tin foil and chicken on the hot plate and curve foil up to create a dish for the juices.
  5. Arrange the lemon wedges around the chicken and Bbq for about 30 minutes at a medium heat, until golden and the juices run clear. Rest for 5 minutes before carving.
