Bored of the same old chicken recipes for dinner? Try our easy take on this Mexican favourite. While this recipe is not too spicy for the kids, feel free to turn up the heat by adding more chipotle sauce or even a chilli for an extra boost!
Prep time: 40 minutes (excluding marinade) Serves: 3-4
1kg chicken drums or nibbles
2 cloves garlic
1 large brown onion, roughly chopped
1 tablespoon chipotle sauce
2 tablespoons oil
¾ teaspoon paprika
1 tablespoon apple cider vinegar
½ tablespoon water
- Put chicken in a non-metallic bowl. Mix garlic, onion, chipotle sauce, oil, paprika, apple cider vinegar and water in a blender until pureed. Pour mixture over the chicken and mix until chicken is evenly coated. Cover and refrigerate for at least an hour, preferably overnight.
- Preheat oven to 180° fan bake. In an oven bag, cook chicken, covered with foil, for 40 minutes. Remove from oven and serve sprinkled with fresh herbs.
