Beach Sandwich

An easy-to-eat, gourmet ‘beach sandwich’ wrapped in parchment paper designed for a beach day outing this summer. This one is packed with flavour - a delicious Mediterranean filling, tasty lamb burgers, cheeses and peppery veges.

Ingredients
 
 

  • 5 Angel Bay premium lamb patties
  • 1 large round loaf of bread e.g., ciabatta or sourdough
  • ½ cup chopped mixed olives
  • ½ cup roasted red peppers drained sliced
  • ½ cup sun-dried tomatoes
  • 1 cup mozzarella cheese shredded
  • 5 slices Swiss cheese
  • 45 g rocket
  • ½ red onion thinly sliced in rounds

Instructions
 

  • Cook the lamb patties according to the instructions on the packet.
  • Prepare the filling: In a blender, combine the olives, roasted peppers, and sundried tomatoes. Blitz until slightly chunky, leaving some texture.
  • Assemble the burgers: Slice the bread in half horizontally. Spread the olive, pepper and sundried tomato filling generously over the bottom half of the bread. Layer the Angel Bay lamb patties on top, followed by sliced Swiss cheese, mozzarella, rocket, and thinly sliced onion.Place the top half of the bread.
  • Cut the sandwich in quarters. Wrap the whole sandwich tightly in parchment paper to hold everything together. Pack and head to the beach!
