Chicken & Pasta bake
Ingredients
- 200 g Penne pasta
- 400 g Chicken breast cut into bite-sized pieces
- 2 cups Frozen mixed vegetables
- 1 jar tomato pasta sauce
- 1 cup grated cheese
- fresh parsley to garnish
Instructions
- Preheat the oven to 190°C.
- Cook the pasta in boiling salted water until tender. Drain the pasta and transfer to an ovenproof dish.
- Heat oil in a frying pan. Brown chicken until cooked through.
- Cook the vegetables in the microwave or boiling water until tender.
- Add chicken and vegetables to the pasta and toss to combine.
- Pour the tomato sauce over the pasta and sprinkle grated cheese on top.
- Bake in the oven for 20minutes.
- Serve garnished with fresh parsley.
Notes
Smart tip: You can use left-over roast chicken meat or a can of tuna in this dish.
