A classic Christmas Turkey recipe with a pecan and cranberry stuffing…
Remember, a good stuffing can really make your Christmas turkey special – and this is a really good one! Remember to glaze your turkey often to keep it super-moist.
- 1 x size 5 turkey
- 30g butter
- 1 onion, finely chopped
- 1 clove garlic, finely chopped
- 6-8 sage leaves, sliced
- ½ cup chopped pecans
- ½ cup cranberries
- 2 teaspoons finely grated orange zest
- 2 cups fresh breadcrumbs
- 1 tablespoon Best Foods Mayonnaise
- ¼ cup orange juice
- 1 teaspoon mixed spice
- ¼ cup mayonnaise
- 2 tablespoons maple syrup
Method
Preheat oven to 170°.
Heat the butter in a medium frying pan and sauté the onion, garlic, sage leaves and pecans until soft and fragrant.
Add the cranberries, orange zest and breadcrumbs and season well.
Stuff the turkey and tie the legs with kitchen string.
Combine the orange juice, mixed spice, mayonnaise and maple syrup.
Place the turkey in a large lined roasting pan and baste well with the spiced mayonnaise glaze.
Cook for 2.5-3 hours approximately, basting a further 2 -3 times until the turkey juices run clear.
Serve with summer roast vegetables and cranberry & port chutney.
