Corn fritters with space jam

Corn fritters are a family favourite and what's not to love about it? Keep them plain for the littlies or dip them in a hot honey barbecue sauce.

Ingredients
 
 

  • 1 cup corn kernels fresh, frozen, or canned
  • ½ cup plain flour
  • ¼ cup milk
  • 1 large egg
  • 1 tsp baking powder
  • salt and pepper to taste
  • vegetable oil for frying
  • Sweet Sting Space Jam to serve

Instructions
 

  • In a bowl, combine all ingredients apart from the oil and space jam. Stir until well combined and season.
  • Heat about 1 cm of vegetable oil in a frying pan over medium-high heat.
  • Once the oil is hot, drop spoonfuls of the batter into the pan, forming small fritters. Cook for 2-3 minutes on each side or until golden brown.
  • Place the cooked corn fritters on a paper towel-lined plate to absorb any excess oil.
  • Serve warm with hot honey barbecue sauce for the perfect sweet and spicy kick.
