Kids Pirate Treasure Chests

These stuffed spuds look just like treasure chests and potatoes are affordable, tasty and a superb source of much-needed carbs and vitamin C for the wee ones.

Serves: 4 Prep Time: 15 mins Cooking Time: 25 mins

Ingredients

4 potatoes, scrubbed
1 packet Maggi Cheese, Onion & Herb Sauce Mix
1/2 cup boiling water
1/2 cup grated carrot
1 spring onion, slices
1/4 cup grated reduced fat cheese

Method

  1. Preheat oven to 200°C
  2. Microwave (1200W) potatoes on high for 10 minutes or until tender, leave to  cool for a few minutes.
  3. Whisk together Maggi Cheese, Onion and Herb Sauce mix and boiling water  in a bowl.
  4. Cut off potato tops and set aside. Scoop out insides and add to sauce,     mash until smooth before adding carrot and spring onion.
  5. Spoon mixture back inside potatoes and sprinkle each with 1 tablespoon of  grated cheese, press the lid back on top so that it sits like an opened treasure  chest.  Bake in oven until cheesy treasure is golden, approx 15 minutes.

Experiment and let the kids choose what to stuff in their spud.
