“The non-vegetarian alternative to my easy-peasy cottage cheese scramble recipe, this takes almost no time to cook and tastes like a meaty version of salsa. Since this is a lazy girl’s recipe, the quantity given is for a single serving but you can easily double or triple the ingredients accordingly. I usually eat this on its own, but a little tip: it tastes great with toasted multi-grain bread as well!”
The best part: You can even sneak in some TV while cooking this. Promise.
Ingredients: (serves 1)
2 large tomatoes (diced)
½ an onion (diced)
4 cloves garlic (finely minced)
1 chicken breast (cut into small pieces)
1 tsp chilli powder
1 tsp salt
1 tbs olive oil
Method:
Heat the olive oil in a medium pan, once the oil is hot; reduce the heat and add the onions,
Sautee the onions and garlic until fragrant
Add the tomatoes and salt. Cover for 2 minutes
Uncover and add chilli powder. Let cook for another 2 minutes
Finally, add the chicken and stir till covered with tomato paste. Cover
Watch some TV for 7-8 minutes and come back to switch off the stove
Garnish and serve hot with toasted multigrain bread
