Rocky Road Slice
We love this Rocky Road recipe - its super easy and super delicious
Ingredients
- 250 g plain sweet biscuits crushed finely
- 200 g butter melted
- 125 g mixed marshmallows chopped
- ½ cup red glace cherries halved
- ? cup desiccated coconut
- ? cup crushed nuts whichever nuts you prefer, we love pistachios
- 500 g milk chocolate chopped and melted
Instructions
- Grease 18cm x 28cm slice pan; line base and two long sides with baking paper
- Combine biscuit crumbs and better in a large blow, press mixture firmly into pan using a fork.
- Refrigerate for 20 minutes, or until firm
- Combine marshmallows, cherries, coconut and nuts in a large bowl; stir in melted chocolate. Spoon evenly over base; refrigerate for one hour until firm
- Before serving, cut into squares with a hot knife
Notes
Tip: crush biscuits in a food processor. You can melt chocolate in a microwave-safe bowl on high for 30 second bursts, stirring after each.
