NZ bread and butter pudding

Bread and Butter Pudding is a true kiwiana dessert which you may remember from your childhood. This bread and butter pudding recipe uses sultanas and sweetened condensed milk. Yum!

Ingredients
 
 

  • 8 slices bread
  • 30 g butter softened
  • ½ cup sultanas
  • ¾ cup sweetened condensed milk
  • 3 eggs
  • 1 ½ cups cream
  • 2 tsp vanilla essence

Instructions
 

  • Heat oven to 180° C and grease a shallow oven proof dish.
  • Spread one side of the bread slices with butter.
  • Place buttered side up in the dish and sprinkle with sultanas.
  • Combine remaining ingredients, whisking well to make a smooth custard. Pour custard over bread.
  • Bake in oven 40–45 minutes until set.
  • If desired, dust with sifted icing sugar before serving with ice cream. Enjoy the kiwiana deliciousness!

Notes

Tip: Leftover French bread sticks cut into thick slices is also ideal for this bread and butter pudding recipe. Or get the kids to cut the bread into cute triangles.
