Orange muffins with poppy seeds and cream cheese icing

If you're looking for a twist on the traditional lemon muffins, this orange muffin recipe with poppy seed is a must-try! The macadamia oil adds a lovely sweet nutty flavour to the muffins and provides the perfect base for the zingy and bright orange zest. Yum!

Ingredients
 
 

  • 1 tbsp poppy seeds
  • ¾ cup milk
  • 2 ½ cups self-raising flour
  • ¾ cup caster sugar
  • 2 tbsp Olivado Extra Virgin Macadamia Oil
  • 100 g butter melted
  • 2 free range eggs lightly beaten
  • 1 orange zest and juice

Instructions
 

  • Preheat oven to 190°C.
  • Line two 6-hole trays with muffin baking cups.
  • Combine the poppy seeds and milk in a small bowl. Set aside for 10 minutes.
  • Combine the flour and sugar in a large bowl. Add the poppy-seed mixture along with remaining milk, butter, lightly beaten eggs, orange rind and juice, and stir until just combined (do not overmix).
  • Spoon the batter among prepared muffin pans. Bake on the middle tray of your preheated oven for 25 minutes or until a skewer inserted into the centres comes out clean. Remove from oven and turn onto a wire rack. Serve warm or at room temperature dusted with icing sugar or topped with cream cheese icing.

Notes

Fresh tips:
  1. If you use two trays on separate levels, swap them around in the oven half way through cooking time so the muffins get the same golden colour.
  2. Always turn the oven to fan bake for an even cook.

Ingredients
  

  • 50 g softened butter
  • 100 g softened cream cheese
  • ½ tsp vanilla extract
  • 45 g icing sugar
  • ½ tsp orange zest

Instructions
 

  • Using a stand mixer or a hand held beater, mix all ingredients until glossy.
  • To ice your muffins, use a spatula or the back of a spoon or use a piping bag with a decorative nozzle for gorgeous designs.

Notes

Fresh tips:
  1. Take the butter and cream cheese out of the fridge the morning before you bake so they have time to soften.
  2. The icing can be made in advance but remember to take it out of the fridge when you start preparing your muffins ingredients so it has time to soften and is easy to spread.
