Papaya Cream with Berry sauce
This is the easiest and the most popular Brazilian classic dessert, Crème de Papaya. Only two ingredients for the main part of it. Crème de Papaya is often served with Crème de cassis in restaurants and bars –served as a stylish dessert cocktail, but we can serve with mixed berry sauce for a non-alcohol family version.
Ingredients (serve 4-6)
1 ripe papaya (yellow)
Same amount of vanilla ice cream
For the berry sauce
1 cup mixed berries (fresh or frozen)
3 tablespoons water
2 tablespoon sugar
A squeeze of lemon
How to make Papaya Cream with Berry sauce
- To make mixed berry sauce. Put berries, sugar, lemon juice and water in a small sauce pan. Put on medium heat and bring to boil. Simmer for 5 minutes or until the berries are soft. Cool and chill in the fridge until needed.
- Remove seeds from papaya and peel. Cut in small pieces.
- Place papaya pieces and the same volume of vanilla ice cream (about 8-10 scoops) in a blender. Blend until it becomes smooth cream.
- In the bottom of serving glasses put 2 tablespoons of berry sauce, then pour papaya cream. Top with a little more berry sauce and decorate with some fresh mint leaves. Serve immediately.
Tip: Puree the berry sauce if you prefer completely smooth finish.
