Rice bran oil carrot muffins
This superb recipe was sent in by Val King of Hastings. It's an absolute pearler. Finally, a muffin recipe that is good for you.
Ingredients
- ¾ cup plain flour
- ¾ cup wholemeal flour
- 1 tsp baking powder
- ¾ tsp baking soda
- 1 ½ tsp ground cinnamon
- ¼ tsp salt
- ¾ cup rice bran oil
- ⅓ cup caster sugar
- 2 eggs
- 1 ¼ cups finely grated carrots
- ½ cup crushed pineapple (tinned) semi-drained
- ½ cup raisins
Instructions
- Pre heat oven to 180 °C. Grease or line a 12 hole muffin tray.
- Sift flours, baking powder, soda, cinnamon and salt in a bowl and mix well.
- Beat oil, sugar and eggs until blended. Add carrots, pineapple and raisins.
- Gradually add the flour mixture mixing enough until just combined.
- Spoon into muffin tray or paper cases and bake 20-25 mins.
