Ingredients
 
 

  • ¾ cup plain flour
  • ¾ cup wholemeal flour
  • 1 tsp baking powder
  • ¾ tsp baking soda
  • 1 ½ tsp ground cinnamon
  • ¼ tsp salt
  • ¾ cup rice bran oil
  • cup caster sugar
  • 2 eggs
  • 1 ¼ cups finely grated carrots
  • ½ cup crushed pineapple (tinned) semi-drained
  • ½ cup raisins

Instructions
 

  • Pre heat oven to 180 °C. Grease or line a 12 hole muffin tray.
  • Sift flours, baking powder, soda, cinnamon and salt in a bowl and mix well.
  • Beat oil, sugar and eggs until blended.  Add carrots, pineapple and raisins.
  • Gradually add the flour mixture mixing enough until just combined.
  • Spoon into muffin tray or paper cases and bake 20-25 mins.
