Star Wars Cupcakes
May the force be with you! These way-too-groovy Star Wars themed cupcakes will be the talk of any birthday party. The cupcake recipe is simple, moist and scrummy and the icing is so easy to make.

Ingredients
½ cup Rice Bran Oil
1 cup sugar
1 ½ cups self-raising flour
2 eggs
1 Go-Gurt or Smacker yoghurt tube (choose a favourite fruity flavour)
1 teaspoon Hansells vanilla essence
Finely grated rind of 1 orange
Half teaspoon salt

12 pan muffin tin
Paper cupcake holders
Method
- Preheat oven to 180 C (170 C if using fan bake).
- Measure oil, sugar, eggs and rind into a food processor and blend until pale and creamy. A good old-fashioned wooden spoon in a bowl works just as well!
- Add the yoghurt and vanilla and whiz again.
- Sift in the self-raising flour and salt. Mix just enough to make a fairly smooth and light batter.
- Place into paper patty-pan lined muffin tins and bake for 14 minutes.
- When cool, ice and decorate with your favourite icing – either chocolate or vanila or both!
To decorate:
Yoda suits white, lemon icing to represent his cloak and Darth Vader is best being dark chocolate.
Sprinkle silver balls as stars.
Find stripped lollies, like red licorice for Darth’s light saber or green licorice for Yoda’s arms.
Marzipan icing from Millies Kitchen Shop, and other home kitchenware stores, can be moulded as their light saber handles and heads. Buy green and black. Alternatively, larger green and black lollies like aeroplanes can be cut into heads and ears.
White piped icing completes their facial expressions (make the traditional icing from the recipe below).
