Use of vinegar in this yummy ribs recipe shortens the cooking time, just cook your ribs in the frying pan! This is an Asian-style spareribs recipe, but you can adapt the method to suit your favourite tastes.
Super Quick Ribs: Ingredients (serves 2)
2 tablespoons cooking oil
500g racks of spareribs (I used small ones from an Asian butcher)
1 cup water
¼ cup white vinegar
1 ½ tablespoons brown sugar
2 tablespoons white wine
2 tablespoons soy sauce
Bunch of spring onions, green ends, sliced
One clove garlic (peeled and bashed)
1-2 dried red chilli (seeds removed)
Spinach to serve
How to make Super Quick Spareribs:
Heat cooking oil in a frying pan over high heat. Add spareribs and cook until brown all over. This takes about 5 minutes. Meanwhile put your kettle on.
Pour enough boiling water in the frying pan to cover all ribs (this is not listed measured above, just cover from the kettle). Tip all water and oil out leaving just the ribs in the frying pan.
Add 1 cup water, vinegar, sugar, wine, soy sauce, spring onion, garlic and chilli in the frying pan. Cover with a lid.
Cook on medium heat for 15 minutes, turning ribs occasionally.
Take the lid off and continue to cook until the cooking liquid thickens.
