The Perfect Steak
How do you like yours? Just pink in the middle? So rare it's blue? Or perhaps you like yours a little more cooked. However you like yours, there's a method to getting it right every time - and it's simple.
Ingredients
- 4 pieces of Eye Fillet or Sirloin steak 3cm thick (approx. 200-250g per person)
- 1 tbsp rice bran oil
- flaky sea salt
- ground black pepper
Instructions
- Bring steaks out of the fridge at least an hour before you want to use them. A good steak is always cooked at room temperature.
- Preheat grill or BBQ to high (approx. 200-220°C). Dress steaks with oil, salt and pepper and rub in well. Place on heat - remember the golden rule and only turn your steak once!
- For rare steaks, cook 4 minutes one side, turn and cook 3 minutes on the other.
- For medium steaks, cook 5-6 minutes one side, turn and cook 4 minutes on the other.
- For well-done steaks, cook 6-8 minutess one side, turn and cook 4 minutes on the other.

- Remove from heat and rest steaks for at least 5 minutes before serving.
