Vegetarian Mexican Burger
This plant-based burger is a vegetarians’ summer delight! It is built with a variety of delicious and Mexican style components made from usual pantry items.
Ingredients
- 4 Brioche Gourmet plant based buns
- 4 Let’s Eat plant-based burger patties
Guacamole
- 1 avocado mashed
- ½ tomatoes diced
- 2 tbsp chopped red onion
- 1 tbsp chopped fresh coriander
- Salt & pepper
- Juice of 1 lime
Chipotle mayo
- 3 tbsp mayonnaise
- 1 tsp chipotle sauce
Burger components
- 1 cup green cabbage finely chopped
- 1 tomato sliced
- sliced jalapenos (optional)
- A handful of corn chips
- coriander
Instructions
- Cook the plant-based burger in the oven according to the packet instructions.
- Guacamole: Combine all the ingredients of guacamole in a bowl.
- Chipotle mayo: Mix mayonnaise and chipotle sauce. Adjust the amount of chipotle sauce according to your taste.
- Toast inside the burger buns.
- On the bottom half of the bun, spread the chipotle mayo, top with cabbage, tomato, plant-based burger, guacamole, jalapenos, corn chips and coriander. Top with the top bun.
