Kale with Caramelised Onions

I love kale and it grows so well in my home vege patch, most of the year. You can just throw kale in with your vege stir fries but I am a huge fan of a good creamy spinach dish so decided a cheese sauce, some caramelised onions and some fresh kale was going to be the vege dish of the day.

Ingredients

4 large handfuls of kale, washed, de-stemmed and leaves ripped.
1 Tbsp butter
1 Tbsp plain flour
1 cup milk
1 Tbsp Parmesan Cheese
Half cup Tasty or Mozzarella Cheese
Sprinkle of Nutmeg
Freshly ground salt and pepper

For the caramelised onions:
2 3 onions, sliced
2 Tbsp Butter
2 Tbsp brown sugar
salt and pepper to taste

Method

  1. Bring salted water to the boil and add your torn kale to the water. Simmer steam about 10 minutes
  2. Meanwhile, melt butter in a small saucepan. Add the flour and cook for 2-3 minutes. Add the milk gradually, and bring to the boil, string constantly. Remove from heat and add cheeses, nutmeg and  salt and pepper and whisk to thicken. Set aside.
  3. Melt butter in a pan for the caramelised onions. Add onions and sizzle, add brown sugar salt and pepper. Cook until golden brown and caramelised.
  4. Add the kale and cheese sauce to the onion fry pan and just combine. Serve with a sprinkle of fresh herbs or micro greens.
