Banana and coconut milk loaf
When it comes to baking, you can't go past a good banana bread...
Ingredients
- 4 medium bananas mashed
- ½ tin Trident Coconut Milk
- 2 free range eggs
- ½ cup olive oil
- 2 tsp baking powder
- 2 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp nutmeg
- ⅔ cup brown sugar
- 1 ½ cups plain flour
- ½ cup FreshLife Almond Flour
- ¼ cup FreshLife Shredded Coconut plus extra for garnish
Instructions
- Preheat your oven to 175°C.
- In a large mixing bowl, mix all ingredients together until you get a lumpy mix.
- Fold in the shredded coconut.
- Pour into your prepared loaf tin, sprinkle extra shredded coconut on top and bake for 1 hour or until a skewer comes out clean.
Notes
Note: This loaf freezes well so you could double up the recipe to use the whole coconut milk tin.
