Banana and pineapple loaf

This is a healthy loaf with the golden combination of bananas and pineapple.

Ingredients
 
 

  • 1 ½ cups rice bran oil
  • 3 cups flour
  • 1 cup brown sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ cup shredded coconut
  • 1 ½ cups undrained crushed pineapple tinned
  • 3 eggs
  • 1 cup mashed ripe bananas
  • 2 tsp vanilla extract
  • 1 cup chopped almonds

Instructions
 

  • Combine flour, brown sugar, baking powder and baking soda together.
  • Beat eggs and add crushed pineapple, oil, vanilla extract and mashed bananas.
  • Add to dry ingredients and combine with chopped almonds.
  • Spread in two greased loaf trays.
  • Bake at 175°C for 60 minutes or until toothpick inserted in centre comes out clean.
  • Cool 15 minutes in pan then remove to rack to cool completely.
